Well if you've never played Half-Life before why don't you play the series then? Half-Life 1 to Half-Life 2: Episode 2 are non-vr games. You can (and should if you haven't already) also play Portal 1 and 2 as they are connected to the Half-Life story. very very loosely (except for episode 2). but they are amazing games so yeah, def go play them
I can play Half-Life Alyx without dropping frames (depending on the situation anyway) or ever encountering any technical issues. I’ve also tried Virtual Desktop, but Flight Simulator straight up refused to go in VR mode through that, not entirely sure if I was doing anything wrong there.

Half-life 1 was one of the first games to truly integrate story, atmosphere, and gameplay together. HL2 was all about physics & motion capture, Alyx is all about feeling a sense of presence in VR. I think the only people who would really appreciate a non-VR version are the hardcore Half-Life fans who just can't afford a headset yet.
It may help you to run it, as it effectively allows you to correct the "up" direction to match your hand position on the controllers. And yes, that teleport on pulling the stick back is required as there is no jump in Alyx. It's the only way to cross any gaps, or to climb through a window. #3.
